Lamb Casserole

 I made this yesterday.  A delicious lamb casserole.  It turned out pretty well considering I only had a little over an hour to cook it.

15 hour potatoes

 We started cooking the potatoes yesterday afternoon.  We missed a step by not putting parchment paper in the baking tin so they were a bit tricky to get out, but one portion turned out well.

Rack of lamb

 I've been avoiding lamb recently as the price has been off putting, it seems to have gone up so much over the past few years.  Whilst shopping in Waitrose I spotted a discounted rack so jumped at the chance.  On disappointment was we didn't have any mint sauce in the fridge.

Sheep and their Lambs

 April took Flo in this morning which meant she got to walk the dog.  I still like getting my steps in so after dropping off Arthur I went to see the sheep.  Looks like they've all popped out over the weekend.

I made a butterflied leg of harissa lamb on Saturday and cooked it on the bbq.  It turned out great.  I also made some homemade coleslaw (with April's supervision) and some spiced couscous.

Well, my cold has lasted till the weekend.

Great.  Luckily my game's been called off so i don't need to run about in the cold for a couple of hours too.
We had friends over last night where April cooled some lovely harissa lamb.  Despite the initial shock of having 20 dried chilies in the recipe it was great.
We've got more friends round tonight so have to think about what to cook them now.  Left over harissa lamb?

Master Chef

There's no point holding a 10 week TV competition to find out who is the next Masterchef. 

It's me.  And I cooked the best meal ever last night.

One of my all time favourite meals is sticky minted lamb chops.  I remember my dad used to get them for us went we went round his for the weekend (20+ years ago).  I think I have now mastered the recipe.

Sticky Minted Lamb Chops (Serves 1)

8 small lamb chops (smaller the better)
2 large tablespoons of mint sauce
2 large tablespoons of honey
1 teaspoon of whole grain mustard
Sprinkle of chili flakes (to taste)
Salt
Pepper

Mix all the ingredients together in a bowl then coat the lamb chops.  Wait till April gets home then put them in the oven at 200C until Phil the kitchen guy leaves having given us his final bill.

Accompany with couscous

Couscous (serves 1)

75g couscous
8 chopped dried apricots
1 pomegranate
6 small chopped tomatoes with the seeds removed
The ripped leaves of about 4 mint sticks
50 grams of cubed goats cheese
A tablespoon of balsamic vinegar
Salt
Pepper

Pour boiling water over the couscous until covered, leave to soak.  Once fully absorbed fluff up with a fork then mix all of the ingredients into the couscous.  Leave in the fridge to cool down.  Or if you want to be completely authentic, serve with chips.
